For some strange reason (actually its not that strange because we love cheese) I had about 5 different cheeses readily accessible. And I had just made homemade bread the day before. Oh, I even had butter (who runs outta butter anyway). Cheese, bread, butter. GRILLED CHEESE!
I knew Macy would be on board. She is her mother's daughter after all. To put it simple...I LUV me some cheese. I developed an even greater love for sour cream's cousin a few months ago when my aunt introduced me to Trader Joe's cheese selection. Garlic onion cheese is a game changer. Trust me. Life changing! And my obsession with goat cheese started way back in 2007 on a trip to Mexico. That reminds me...we should get some milk goats. And gorgonzola...Please tell me you've had gorgonzola?!
On this sunny afternoon I chose three cheeses to take part in our grilled cheese fest. Cheddar, cause its guuuud. Mozzarella, because it has that fabulous creamy melty texture. And lastly, cream cheese because...HELLO it's cream cheese.
As I was shutting the refrigerator door with my elbow, (arms full of cheese) something caught my eye. Hold on to your chairs ladies and gents...EGGS! And then I had this crazy thought. What if, and I mean, could I do that? Really?
What if...I put a fried egg on my 3 cheese grilled cheese sandwich. Genius, right?
Yeah, I know.
So here is how it went down.
I sliced up some cheddar. Slathered one side of my homemade bread with butter and the other with cream cheese. All while my cast-iron (only way to go) skillet was warming. Meanwhile, another skillet warming to do my egg. Skillet is hot so I threw my bread in butter side down. Then, I layered it up with cheddar, mozz, and the other piece of bread. Macy was not feeling my love for the egg so she took hers without. Lame. As soon as the grilled cheese was brown on that side I flipped it over. Let it brown on that side and done.
While her grilled cheese was cooking, I fried my egg. Over easy of course. I needed that savory delicious yoke to saturate my grilled cheese when I cut into it.
I did the same routine as Macy's, except for placing my egg on the sandwich before I placed the second piece of bread on it. I gently flipped the sandwich and did not pat it down because I did not want my yoke to break.
And then we ate. It. Was. Good. Better than good, actually. It was freaking fantastic!!! And before I gobbled all of mine up I did manage to snap a quick pic. Remember...I am NOT a photographer.
Moral to this story: Cheese + Butter+ Bread + EGG= Heaven on your plate.
