Stir-fry To The Rescue

Let's talk vegetables. Veggies are my favorite. Seriously, I love em! Can't get enough of em! (Great, now there is a 90's country song circling in my brain) 

Do you ever have have the best intentions of buying up the produce aisle and whipping up yummy FRESH veggies throughout your weekly meals? Of course, it never completely works out and by the end of the week you find yourself weeding through $$$ rotting in your produce drawer. So sad. 

How do we weather these moments of absolute despair? I mean, produce ain't cheap folks. Nu uh. That stuff is TOP dollar. And if you are are buying organic like me, then you are totally freaking OUT! All of that money being thrown out to my chickens? Or even worse...the TRASH CAN! Just go take a few 20's outta your wallet and chunk them in the garbage. 

Bottom line. It sucks!

So what to do? 

Well, make a veggie stir-fry! Duh. 

Take out all of your soon to be (or already) wilted veg and lets get to work. Just go with the flow. Whatever you may have on hand will work. 

Tonight I had...

2 small red peppers (sliced)
green beans
1 head cauliflower (cut in chunks)
1/2 bag carrots (sliced)
1 large leek (chopped)
3 cloves garlic (minced)
EVOO
1/2 T Ginger
2 T Sesame oil
1/2 cup  soy sauce
whole wheat spaghetti pasta

Now, there are a few ways you can do this. I love my veggie steamer. It makes my life easier. I do nothing. It does it all. You could also roast your veggies at 420 for 20 minutes or so. I chopped cauliflower in chunks and sliced my carrots. Placed those in the steamer along with my green beans and got it going. Boiled some water for my pasta. When that boils toss in pasta and a bit of salt and cook. I sometimes use rice, but didn't want to wait FOREVER for it to cook. Pasta is quicker. Warmed a skillet on medium with a few glugs of EVOO. Placed my chopped leeks in there. Stirred those around for about 2 min. Then I added a 1/2 Tbsp of ginger. Then my garlic. Tossed for another few minutes. Grabbed some sesame oil and soy sauce. I put in about 2 Tbsp Sesame oil and 1/2 cup soy sauce.  Stirring this constantly to combine. About this time my cauliflower, beans, and carrots are beeping. I take those out and set in my sauce. I then ladle about 1/2 cup of that starchy pasta water into my sauce and veg. This helps thicken things up a bit. My pasta is done and I toss about 8-12 oz (half of the box) of it into the mixture. Mix it around gently and DONE. 



I love to chop up a handful of peanuts for a little nutty flavor and crunch. And I always, always have sriracha and red pepper flakes on hand to give it a little kick. 

This recipe is literally done in less than 20 minutes. YES! Really!!!

Saving you time and money... Man, isn't that kinda stinkin' AWESOME!?

Wait, one more thing...it's fast food that is actually GOOD for you. Even better.
