Avocados. That magical green fatty guac makin' fruit. Yes, fruit. Just ask google.
I am a fan of butter. And I think ya'll know that by now. But what you may not know, is I have an obsession with avocados.
Avocado grilled cheese.
Avocado wraps.
Avocado in my soup.
On my toast.
In my smoothie.
Ice cream.
Eggs.
You name it...I will probably put avocado in it or on it.
So, why not Avocado butter! Compound butters are my fav. You can put whatever you want in butter. Whip it and TADAHH!!!! Compound butter, my friends.
So this simple very easy recipe for Avocado Butter is sure to please.
The MOST important part of this recipe is also the most finicky part. Don't you just love that word: finicky? Yes, me too. Except when using it to describe one of my favorite fruits (yep, I said fruit). You may have seen this lovely graphic floating around the inter web? It speaks some serious truth!
A perfectly ripe avocado is hard to come by round here in these parts. Since most avocados are grown in California or Mexico they must travel quite the distance to make it to my family dinner table. Another interesting tidbit, is avocados don't actually ripen until pulled from the vine! Usually our fruits and veggies need to ripen on the vine for maximum nutritional value. But not these babies.
Now, I am a very lucky girl because we have a small locally owned produce place on the square here in small town USA. And they have the most ripened and ready to eat avocados. You just have to go in there and kindly ask for a ripe avocado. The sweet lady will go to the special place where there is a special stash and pull from it the most perfectly ripened meaty avocado. Perfection.
So now that you have your prefect avocado we can get compounding.
Avocado Butter
A perfectly ripe medium Avocado
A stick of REAL Butter (room Temp)
Half a lemon or lime Juiced
Some various spices: Salt, garlic powder, onion powder...these are all optional. Just add to taste
Plop the avocado in a bowl and pour the juice over it. This way your avocado doesn't turn 'poo' brown. You're welcome! Then add that mixture and the butter into your handy mixing bowl. Turn to medium speed and whip them together. Bam! That's it. You can add seasonings to taste. Definitely salt to taste. Yum! Then you can store in any plastic or glass jar with a tight fitting lid for I'd say 5-7 days. (But, to be honest, I've never actually tested that theory. Cuz' it aint gonna last that long around these parts.) Put in the fridge and use it on ERRRRything.
