But first, here's a quick healthy summer lunch you and the babes can both enjoy-- and in less than 15 minutes.
P.S. Please excuse the crazy mom hair. It's Texas in the dead of summer, people. If my hair even touches my neck-- bad things happen.

Easy Summer Lunch
4 Cups cooked brown rice pasta (or any pasta of your choice)
1 Cup tomatoes
1 medium avocado
2-3 handfuls of baby kale
1/2 jar of marinated artichoke hearts and juices
4 hard boiled eggs
Salt and pepper to taste
Cook pasta per instructions on package. Slice tomatoes, avocado, and artichoke hearts. Toss kale into warm pasta once drained. Then mix with all ingredients and juices from artichokes. Salt and pepper to taste and serve with sliced hard boiled egg on the side. Easy. Light. And yummy!
